Now that the temperatures are starting to dip and it's beginning to feel more like Autumn, I love to cook belly-warming recipes such as soups, stews & chili. What makes a recipe even better is if it can be made quickly for those busy weeknights. Chili is a delicious meal that can be made ahead in the morning (like I do) or thrown in a crockpot. It also freezes nicely! It's a great way to stretch your budget with simple canned ingredients and ground beef as well. There is nothing cozier than the smell of a warm pot simmering on the stove on a gloomy, crisp day.
Here is a staple in my home during the cooler months: Easy 5 Ingredient Chili
INGREDIENTS:
- 1 lb ground beef
- 1 can diced tomatoes and green chilies
- 1 can diced tomatoes
- 1 can kidney beans
- 1 packet chili seasoning (i prefer low-sodium)
OPTIONAL: shredded cheddar, sour cream, chopped cilantro or green onions.
DIRECTIONS:
- In a medium pot, brown the ground beef on medium high, about 8 minutes. Do not drain.
- Add the packet of seasoning mix. Stir well. Lower heat to medium
- Stir in the cans of beans, tomatoes and tomatoes w/chilies. Do not drain.
- Simmer on low about 30 mins.
- Serve in bowl topped with shredded cheddar, a dallop of sour cream & garnish with cilantro or green onions (optional).
- Serve with warm cornbread (optional).
FOR SLOW COOKER: Brown ground beef in a pan. Add all ingredients to slow cooker plus 2 cups of water. Set crockpot to low for 4-6 hours.
